Failla Wines have finally become available in Texas and Bobby Gonsalves, Biga’s wine director, wasted no time adding them to the wine list.
Failla produces Old World styled wine in California’s Sonoma Coast.

A brand name for the popular style known as blue brie. (Montbriac is another well-known brand name.) Hailing from the Auvergne, and wearing a bright blue coat with nothing underneath but buttery spreadability when young. The rind has some moldy, peppery notes, but this is barely a blue. Make the introduction to your favorite blue cheese hater, and pair with the flowery aromatics of Fumé (aka Chenin) Blanc.
